In the new part of town, this is arguably the best restaurant in Granada. It is a genuinely wonderful dining choice -- don't be disappointed by its location on a banal-looking expanse of concrete, in a modern-day apartment complex. Inside, the venue contains a small tapas bar near the entrance, an immaculate and rather formal dining room that's packed with members of the local bourgeoisie and business community, and an attentive staff. Chef Jesús Diego Díaz prepares dishes that include green asparagus "in the style of Santanderinos," which is artfully interspersed with Iberian ham, shavings of cheese, and ingredients we couldn't even guess at. Tasty main courses include stuffed squid covered with a squid-ink-based black sauce, as well as a medley of beef, lamb, and other fish dishes. Come here distinctly for the food and the insight into modern-day, nontouristic Granada.
