Lessinian truffles are highly esteemed by gourmets, and when they are in season, Alla Ruota uses them to improve their recipes for tagliatelli and ravioli. However, even at other times of year there is a vast choice of first courses, including ravioli with red turnips or duck fritters. Amongst the main dishes, the pork with apples has an unusual combination of flavors, as does the donkey meat stew. Alternatively there is polenta with Vezzana cheese, or chicken breast with ricotta.
