Imperial style cooking relies on traditions and great care in the making. No corners are cut at Xindalu, from the special oven brought in from Beijing for roasting Peking duck to the fragrant date and apple wood used in that oven, or the two premier Peking duck chefs, also imported from Beijing, to supervise the open kitchen, if this is the closest you get to Beijing in your travels, stop here for a taste. In any other restaurant, the hand pulled noodles and carefully created dumplings would not play second fiddle, but in Xindalu, expect a fully orchestrated meal.
