Sincerity Cafe & Restaurant or simply Sincerity Restaurant has been around since I was three years old (in 1956) along Nueva, now called E.T. Yuchengco St. Their most famous offering is the fried chicken which is undoubtedly the best fried chicken in town. They take pride in the fact that other fried chicken would need a sauce to go with it while this one may be eaten without (any accompanying sauce)! Sincerity's fried chicken is crispy yet tender and juicy. That is the way I like my fried chicken because most other fried chickens offer crispy fried chicken, but the meat is dry. I would say that it is even better that any foreign brand of fried chicken barring none! The chicken skin stands out for being neither too crunchy nor too soggy. It's perfectly balanced with the meat having a sweet & a slight gingery flavor.
