British fine dining may seem like an oxymoron after your last trip to the United Kingdom, but at Simon's -- a spare, well-lit dining room in downtown Saskatoon -- you'll enjoy modern British-influenced food that's more in the style of the celebrity English chefs that overpopulate TV's Food Network. It's no longer culinary news to use classic French or Italian techniques with fresh Canadian ingredients to create a regionally focused cuisine; it's far rarer to encounter British cookery as a catalyst to transform local foods. But that's the alchemy at Simon's. An Angus rib-eye steak is served with Scotch whisky cream sauce; a terrine of elk, chicken, and smoky bacon comes with cranberry chutney; and slow-cooked lamb shank is glazed with honey and rosemary and served with "bubble and squeak," a type of Yorkshire pudding. Of course, there are traditional British favorites here, such as shepherd's pie and fish and chips, and from 2:30 to 5pm, afternoon tea is served.
