Amidst fake foliage and a miniature model of Xinjiang Province's Tian Shan (Heavenly Lake), patrons are treated to a fun, raucous, and hearty dining experience complete with whooping and dancing waiters. The Uighurs are Muslim, so lamb dominates the Chinese-only menu. Definitely try the juicy kao quanyang (roast lamb), though if you plan to dine after 7pm, call ahead and reserve a portion, as this popular dish often runs out early. Other favorites include kao yangrou (barbecue lamb skewers), da pan ji (chicken with cardamoms, peppers, tomatoes, onions, and potatoes), and laohu cai, a refreshing Xinjiang salad of cucumbers, tomatoes, and red onions. Noodles (miantiao) or baked bread (bing) make good accompaniments, as does Xinjiang black beer (Xinjiang pijiu).
