If a thick, juicy, sizzling steak is your idea of the perfect meal, then Ruby River is for you. And if you also happen to like country western music, cowboy boots, and cold beer, you'll be even happier. Decor is strictly Western, with a large painting of galloping wild horses, a rock fireplace, and a bar with tall tables and buckets of peanuts. Beef is USDA Choice, aged 21 days, hand-cut, seasoned, and double-broiled at 1,600°F (871°C). Choices range from the New York cut (voted Utah's best steak in various polls) to tender filet mignon, rib-eye, T-bone, and porterhouse. The very tasty prime rib is slow-roasted and served with fresh-grated horseradish and sour cream. Although steak is really the reason to come here, the restaurant also does an admirable job with its slow-roasted baby back ribs in Louisiana-style barbecue sauce, and its several chicken dishes, including chicken breast in a sweet raspberry-wheat-beer marinade. Also offered are a fresh fish of the day and a broiled salmon filet with barbecue sauce. Side dishes include a savory -- a tasty potato that's baked and then dipped in a garlic batter and deep-fried -- and a sweet -- a yam that's baked, dipped in a cinnamon batter, and deep-fried. Several microbrews and a number of other beers are available, as well as wine by the glass and bottle, and a complete liquor bar.
