Goa was a Portuguese colony up until the 1950s, being part of the Indian segment of the Portuguese overseas empire. The local cuisine, therefore, was quite unique—a distinctive fusion of Indian and Portuguese ingredients and flavors. The Nova Goa restaurant presents a varied menu, with dishes representing the best of that fusion cooking.
