Chef Andy Yang is one of the city's most accomplished chefs. He has been heralded as the "the finest sushi chef in the world" by famed master Morimoto of Iron Chef. Andysan is an expert, and acclaimed artist, in preparing the palate for extended dining. Fusion cuisine allows various ingredients, belonging to multiple cuisines, to complement each other in dazzling and unexpected ways. At Nouvelle, one will find lobster rolls reinvented by wrapping them in traditional Filo dough; or classic maki sushi fitted with fresh mango and tuna -- one could also enjoy French poultry dressed in sumptuous miso reductions.
