Copenhagen's first restaurant that enables you to eat all of an animal, from the tip of its nose to the end of its tail (hence the name), can be found—appropriately enough—in the old meat-packing district, Kødbyen. Lit mainly by candlelight, dining is dine in the basement at thick, wooden tables in manly dimensions, with the day's animal (and the cuts available) written on large blackboards across one wall. While vegetarians are clearly not the focus group, this meaty restaurant is not without principles—all meat is free-range and the accompanying vegetables organic. The restaurant has a small list of biodynamic wines and micro-brewed beers, and the prices are reasonable: A main for two for DKK 180. Nose2Tail opened in spring 2011.
