Chef Norman Van Aken has created a culinary masterpiece with his fusion of Latin, Caribbean and Asian recipes paired with traditional European technique. A few of the favorite tapas include a soy marinated beef tataki with warm ponzu and pickled daikon, the 13 hour roasted pork sandwich drizzled with vanilla-guava BBQ sauce and the Key West shrimp ceviche.
