At the most stylish restaurant in Toulouse you can enjoy the cuisine of master chef Michel Sarran. Sarran's wife, Françoise, oversees the three red, green, or violet dining rooms, on separate floors of a building near the Novotel Centre. The creative dishes have attracted diners as diverse as the prime minister of France and showbiz types such as Sophie Marceau and Gilbert Becaud. Start with a warm soup of foie gras and oysters, or perhaps a cup of organic yogurt studded with black truffles from the Périgord. Move on to a succulent version of poached sea bass served with a creamy polenta and lobster sauce; or perhaps a portion of roasted wild black boar from the underpopulated Bigorre region of France, served in a stewpot with thyme and wine-roasted potatoes. Dessert may include ravioli stuffed with creamed oranges and served with an aspic of sweet white Gaillac wine.
