Some restaurants are so successful for so long that the local food-lovers start taking them for granted. Such is the case with this downtown Baltimore institution, which is a shame. Although its days as an innovator may be long gone and its dishes may be more than a touch milder than those coming from more adventurous kitchens, the Maison can still turn out fabulous meals. It still looks great, with mint green and white walls and enormous chandeliers. Try the Lobster Cardinale for something truly memorable.
