This restaurant in an 18th-century house is one of the best in Tours. Menu items change three times a year, depending on the inspiration of chef Gildas Marsollier. He prepares classics but also experiments, with offerings such as noisettes of roasted rabbit with bacon and almonds, crisp grilled crayfish with partridge-stuffed ravioli, and braised turbot with gratinéed viennoise of Comté cheese. Roasted filet of pigeon with pink grapefruit is an enduring favorite.
