Set on a busy commercial boulevard near the center of town, this is a deeply entrenched staple of conservative French cuisine that's always mentioned as one of the town's most visible, most professional, and most consistent dining spots. The rooms that contain it haven't changed much (especially the wood paneling and mirrors) since it was built in 1928. Since the restaurant opened in 1932, it seems everybody in town has been here at least once. Today, the menu remains relatively conservative but with long lists of flavorful and freshly made food. The best examples include sweetbreads with morels; a cassoulet of veal kidneys with sweet red wine; a long list of grilled meats from nearby purveyors, served with your choice of Béarnaise, pepper, garlic-butter, or wine sauce; a stewpot of scallops with flap mushrooms; sole meunière; and medallions of monkfish with salted ham and stewed tomatoes.
