One of downtown Toulouse's most appealing cost-conscious bistros occupies the street level of a historic 18th-century mansion immediately adjacent to the Hôtel de Ville (town hall). Established in 2004, the bistro is ringed by the pink-colored bricks of antique Toulouse, and set beneath a vaulted ceiling. Menu items feature contemporary twists of time-tested French specialties, many of them heralded by workaday diners who appreciate the attractive ratios of value-to-quality. The best examples include an unusual version of macaroni studded with flap mushrooms, truffles, and foie gras; and a version of cassoulet (the specialty of France's southwest) that's made with both duck and pork. An appropriate starter is a braised slice of foie gras with peaches and grapes.
