The most appealing seafood in Malmö is prepared and served in this artfully simple, mostly white dining room whose terraces spill out, during clement weather, onto the cobble-covered street on one side, and into the corridors of the Saluhall (food market) on the other. The result is a bustling but almost pristine setting where the freshness of the seafood is the main draw. Menu items are prepared from scratch every day, based on whatever is available within the Saluhallen, and the kitchens are visible to whomever happens to pass by. Diners are served brimming bowlfuls, one after another, of this restaurant's cream-based, and then its tomato-based, fish soups, accompanied by fresh bread and a salad. Other examples include a half-lobster with lemon-flavored mayonnaise; lobster-larded monkfish with vinegar sauce; light-grilled tuna with truffled mayonnaise, roasted peppers, and artichokes; and grilled veal with morels in white sauce with a compote of onions. Dessert might include a mousse made with bitter white chocolate, served with dark-chocolate madeleines and coffee sauce.
