When Bo Bech's Paustian closed in 2010, it seemed like one of the big stars of Copenhagen's restaurant scene was out of the business—until April 2010, that is, when Bech opened Geist on Kongens Nytorv square in a prime location next to other swanky eateries like Quote and FIAT. Geist is a smart yet informal restaurant with roomy sofas, a large bar and as its centerpiece a central open kitchen with pride-of-place Molteni stove –seen as the Ferrari of ovens. The restaurant has ditched changing set menus in favor of an extensive à la carte menu – choose your own collection of starters, vegetables, mains and desserts (100-200kr) until you're full or broke, and the wine list is even longer. The menu is Scandinavian with a modern touch and an international outlook, with fish, meat and vegetable dishes on the long menu card. Bo Bech also has his own bakery, Bo Bechs Bageri, on nearby Store Kongensgade.
