You walk along, sideswiped by waves of irresistible aromas, sizzling sounds, and tempting sights coming from the roadside carts of Penang, Bangkok, and Singapore. You want to pounce greedily. But the fare at Flying Tiger is updated Asian street food. So what consulting chef Tina Fineza, late of George and Bin 942, has done at this smart new spot is deconstruct traditional dishes, then rebuild and present them in inventive and attractive ways: Indian, Japanese, Filipino (reflecting her heritage), but light on Chinese, she says, because there's plenty around already.
