The Dorandó is an elegant splurge tucked away just off Piazza Duomo, where the stone-walled rooms, alabaster platters, and knowledgeable waiters create a backdrop for San Gimignano's best dining. The menu doesn't just list dishes; it describes each one's history in detail as the chef attempts to keep the oldest traditions of Sangimignanese cooking alive -- many of the dishes purport to be medieval, some even Etruscan, in origin -- while balancing nouvelle cuisine philosophy with hearty home-cooking quality. The menu varies with the season and market, though if the excellent cibreo (chicken livers and giblets scented with ginger and lemon) is offered, by all means order it. The desserts are excellent, too.
