Fabrice Vulin, French chef, (notably rated by the Michelin Guide), offers a sumptuous cuisine in a warm and contemporary setting, near the fireplace or the swimming pool, according to the season. The refined dishes brilliantly combine the subtlety of French cuisine and the quality of Moroccan products: shrimps From Dakhla (a Saharan fishing port) with Argan oil dressing; tender, flavorful lamb from the Atlas Mountains; and, hot oysters with truffles from Oualidia. The menu offers many marvelous surprises, as does the impressive wine list. Proper dress is required, and a reservations are advised.
