Konya's signature dish, the etli ekmek, is a delectable, pseudo pizza-ish invention that tops flatbread with minced lamb. Top it with cubed spiced lamb and it becomes the Konya boregi. (There's a cheese version and one where you get to mix it up.) And there's no better place to try a local specialty than at the etli ekmeçi in town, which in this case is Cemo.
