Manila isn't short of Italian restaurants but a good Italian, with authentic cuisine, is much harder to come by. Cafe Caruso is renowned for its decently accurate take on Northern and Southern Italian cuisine and, most of all, for its fantastic pizzas. The restaurant is simply and elegantly decorated, with a charming open kitchen; the pizzas vary from the very simple (margherita) to one bursting with four cheeses. There is a good wine list and as the restaurant is popular with locals and ex-pats alike, reservations are recommended.
