Just 2.5km (1 1/2 miles) south of Biarritz, directly adjacent to the main railway station, this restaurant is named for a 19th-century slave who escaped from an American plantation by hiding in the bottom of a French ship. Here she established an inn, which Napoleon's army used on its passage to Spain. The inn doubles as a snack bar, and the two dining rooms serve flavorful meals. Some of the best dishes include a terrine of foie gras, along with hake, monkfish, or sea wolf prepared in the Spanish style -- that is, grilled and served with a garlic-flavored parsley sauce.
