Bayonne is as well known for its chocolates as it is for its hams and pork products, and this combination museum and sales outlet is a good place to gather what you'll need to understand how they're made. Come to this industrial-looking neighborhood near Bayonne's railway station for a history of how and where the industry developed, and an insight into the complicated process of gathering together the ingredients for one of the world's most sought-after confections. In the showroom that's adjacent to the exhibits you'll find one of this organization's specialties: a "bouquet of chocolates," wherein chocolates flavored with, among others, vanilla and "les piments d'Espelettes" (spicy peppers from a nearby Basque village that's famous for producing them) are gathered together into forms and wrappings that resemble a bouquet of flowers.
