One of the most famous restaurants in the Basque world, this legendary place occupies the lavishly renovated childhood home of owner/chef Juan Mari Arzak. Well known in San Sebastián for his role in preparing a meal for Queen Elizabeth II of Britain, Arzak combines staples of the Basque culinary legacy with many new creations of his own. Begin with a selection of fresh oysters or natural foie gras. Crayfish is regularly featured as an appetizer, as is the chef's special sopa de pescado (fish soup). For a main course, consider merluza (hake) in vinaigrette with onions and small squid. On the back of the menu is a list of classic dishes that have won the most praise among visitors -- everything from stuffed sweet peppers with fish mousse to pheasant to partridge. The orange flan with cream just might be the best dessert you've ever had. The restaurant is on the main road leading from the center of town to the French border.
